Bean Itacate with Avocado Leaves

  • For the filling, in a skillet heat the butter over medium heat, brown the onion, add the chile de árbol, the avocado leaf, and the black beans and cook for 10 minutes. Blend with salt and mix until you get a puree-like consistency. Booking.
  • On a flat surface, place the corn dough, hollow out the center and add the lard and salt; knead until all the ingredients are incorporated. Booking.
  • For the itacates, form a ball of dough, place it on a piece of plastic and with the help of your hands, form a circle. With a spoon, fill the circle with beans and close the tortilla in 3 parts to form a triangle; cook on a griddle over low heat for 8 minutes. Repeat until finished.
  • Serve the itacates on an extended plate and accompany with cream, cheese, lettuce and red sauce.
